mozzarella pork & pesto tomatoes


Hello friends!

I hope that y’all’s week is going well! I have officially taken my last final of my college career… It’s weird. I’m not entirely sure how I feel about it, and it’s kind of a weird thing to wrap my brain around. And in two ish days, I’ll be walking the stage into adulthood.. Yikes.

So anyways enough of that, let’s talk about food! That’s my stress relief and it benefits everyone involved! This week I kind of threw this together and hoped for the best, and I was actually pleasantly surprised! I always love a little Italian food, it’s definitely a comfort at times (especially this week!) that just makes life better.

This week I made a mozzarella pork with pesto sauteed tomatoes with broccoli. Stay tuned for the recipe!

What you’ll need:

  • 1 lb of pork chops
  • 1 small pack of cherry tomatoes
  • 1 head of broccoli
  • 2 tablespoons basil pesto
  • onion and garlic powder
  • mozzarella cheese
  • salt and pepper to taste

What you’ll do:

  • First, preheat the oven to 375 degrees.
  • While the oven is preheating, place the pork chops in a baking pan.
  • Season them with salt, pepper, onion and garlic powder. (I added some Italian seasoning but it’s not necessary)
  • Place the pork in the oven for about 20 minutes.
  • While the pork is baking, cut up the tomatoes from the package and add them to a pan set on medium heat.
  • The tomatoes take awhile (about 10 minutes.. It feels like a long time when you’re pretty hungry!) and when they’re getting close to being done, add one tablespoon of pesto and mix well.
  • After the tomatoes have been mixed with the pesto, add the broccoli and the rest of the pesto. Let sit until the broccoli is done cooking. This takes about an additional 10-15 minutes.
  • At this time the pork should be done, so take it out and immediately add as much/ as little mozzarella as you like. This will allow it to melt nicely!
  • After the tomatoes and broccoli are done, turn off the heat and you’re ready to eat! (I do enjoy the occasional rhyme)

All in all, this recipe cost less than $20 and you can eat on it for days! Adding parmesan is a lovely addition as well. Of course, Italian  always pairs nicely with your favorite wine! I haven’t had a chance to taste this wine yet, but I can imagine it’s quite tasty!
